A mild, sweet, and uncomplicated organic coffee from Mexico – decaffeinated, but with full flavor. Caramel, malt, milk chocolate, and nougat make it the perfect coffee for afternoon and late evening. Grown by around 750 Tzeltal smallholder farmers of the Cooperativa Yaxcoffee in Yajalón, Chiapas, and gently decaffeinated with CO2.

Omni-roast – developed for espresso and filter coffee.

Recommended for espresso, cappuccino, latte, and milk-based drinks

Yes – with over 700,000 hectares, Mexico has one of the largest cultivation areas worldwide and is particularly known for organic coffee. Almost exclusively Arabica is cultivated.
Typical profiles are mild, low-acid with a delicate sweetness and notes of nuts and chocolate. This makes it particularly digestible and well-suited for milk-based drinks.
The most important growing regions are Chiapas, Veracruz, and Oaxaca. Chiapas in the south produces highland coffees, which are predominantly organically grown.
In the CO2 process, the green beans are moistened and the caffeine is extracted using compressed carbon dioxide. No chemical solvents are used, which largely preserves the aroma and taste.
Not completely, but almost. In the EU, decaffeinated coffee may contain a maximum of 0.1% caffeine – meaning there is no stimulating effect.
The aroma is a little milder and the bean appears smoother, but with good quality, the taste remains fully preserved. Bean quality, gentle decaffeination, and roasting are crucial.
